Par items, such as French fries, are on your menu every day and are ordered according to Par levels. These levels are calculated to allow sufficient provisioning between two deliveries of a product. They are established by taking into account an assessment of daily consumption and the number of days between order placing and delivery. Quantities to order are then calculated by deducting quantities on hand.
For example: Product A is ordered 2 days in advance and there are 3 days between 2 deliveries. You use 10 lbs of Product A per day and you have 28 lbs on hand. The quantities you need to order can be calculated using the following method:
  Par item formula
Par levels must be reviewed regularly and may need to be adjusted seasonally. It is recommended that you use a limited number of par items. Ordering primarily according to your needs will guarantee the lowest level of inventory and product quality, and prevent waste.
