Deep Fat Fryer

Frequency:
Weekly or as needed

Procedure:

  1. Allow fryer to cool before draining the oil. Filter oil and store in clean, sanitized container if it is to be used again.
  2. Wipe up any spilled oil with paper towels.
  3. Fill fryer with water 1/2 inch below the fill mark.
  4. Add Absorbit using 12 oz. for a 35 lb. capacity fryer or 6 oz. for a 15 lb. capacity fryer.
  5. Turn on heat and bring water to a boil until fryer is clean.
  6. Turn off heat.
  7. Scrub clean any heavy residues.
  8. Clean the exterior of the fryer with the same solution.
  9. Drain the cleaning solution, adding cold water during draining to prevent warping.
  10. Fill fryer with water and add 6 oz. of vinegar to neutralize the solution.
  11. Drain and flush thoroughly with hot water.

Safety Tips:

  1. Allow fryer to cool before draining the oil.
  2. Do not use plastic buckets for storing the oil.
