Procedure:
- Allow fryer to cool before draining the oil. Filter oil and store in clean, sanitized container if it is to be used again.
- Wipe up any spilled oil with paper towels.
- Fill fryer with water 1/2 inch below the fill mark.
- Add Absorbit using 12 oz. for a 35 lb. capacity fryer or 6 oz. for a 15 lb. capacity fryer.
- Turn on heat and bring water to a boil until fryer is clean.
- Turn off heat.
- Scrub clean any heavy residues.
- Clean the exterior of the fryer with the same solution.
- Drain the cleaning solution, adding cold water during draining to prevent warping.
- Fill fryer with water and add 6 oz. of vinegar to neutralize the solution.
- Drain and flush thoroughly with hot water.
