Service Procedures

CALL FREQUENCY: Monthly (Minimum)

FOOD SERVICE VISIT: Check in with the Manager for any problems between calls and for training new employees in the correct use of Ecolab products.

Ecolab Representative proceeds to dishroom to make the following checks:
Results of:

  • Pot and Pans

DISHMACHINE – AREAS INSPECTED:

  • Final Rinse P. S. I. with gauge
  • Fill Valve
  • Rinse Valve
  • Drains
  • Overflow
  • By-Pass
  • Gauges
  • Wash Arms
  • Final Rinse
  • Switches
  • Product
  • Conveyors
  • Potential OSHA Violations
  • Final Rinse Temperature
  • Rinse Tank temperature
  • Wash Tank Temperature
  • Pre-Scrap Temperature
  • Pre-Wash Temperature
  • Curtains
  • Pumps
  • Rinse Arms
  • Pre-Scrap Hose
  • Motor
  • Timers
  • Potential Healthcode Violations

Any problems found are then reported along with their cause, cost, and any action taken to resolve the problem. Prior to leaving, the Ecolab Representative (depending on the severity of the mechanical problems) will then make adjustments and all possible repairs. Service reports should be signed by the Manager with all action needed agreed upon.

TRAINING: Operating charts (English and Spanish) must be posted and checked on each call. The Ecolab Representative will provide training on:

  • Racking and Scraping of Tableware
  • Silverware Pre-Soaking Procedures
  • Breakdown and Clean Up of Dishmachine

The Ecolab Representative is responsible to teach and train on all solutions to operational problems found. Formal training classes must be scheduled and conducted quarterly.

  • 2026/Rinse Max
  • Solitron 1000
  • AS-1, Drain Brain or Oasis Tower for dispensing Mikroklene
  • Digit Hand Soap Dispensers (No charge)

PRODUCTS:

  • Sodexo Warewashing Product Standardization List

KEY INITIATIVES:

  • Oasis 146 and Mikroklene approved sanitizers
  • Kitchen must have inventory of iodine test strips (no charge)
  • Antibacterial Hand Soap must be used in food service and employee locker/restrooms
  • Material Safety Data Sheets on file
  • Right-To-Know Station is approved and may be purchased from your Ecolab Representative
