Dishmachine Clean-Up

Frequency:
Daily

Procedure:

  1. Turn off machine, heaters and electronic dispenser, then drain all water tanks.
  2. Remove curtains and scrub clean with Solitare solution. Inspect curtains for wear. Let dry overnight.
  3. Remove and clean scrap trays.
  4. Check and clean pump screens and overflows.
  5. Remove, clean, and then inspect the pre-scraper.
  6. Wash and rinse the wash arm and rinse arm. Clean final rinse jets by carefully poking out obstructions. Remove the gray end caps from wash and rinse arms. Lightly tap the wash arm to remove any food particles that may be trapped inside the arm.
  7. Flush inside of machine with pre-flush hose. If possible, use a sprayer with 150-400 ppm Oasis 146 OR 25 ppm Mikroklene.
  8. Clean the top and sides of the machine.
  9. Scrub all dishroom work surfaces with detergent and water, then rinse and dry with a squeegee.
  10. Clean walls and floor with detergent and water.

Safety Tips:

  1. Turn off machine, heaters and electronic dispensers before cleaning dishmachine.
  2. Follow Lockout / Tagout procedures.
