As used Procedure
-- Scraping and Sorting Dishware:
- Scrape
food soil from all dishware into disposal or garbage can.
- Thoroughly
spray dishes with pre-flush hose until all food has been
removed.
- Sort
and stack dirty dishes on break down table.
- Pre-soak
all flatware for 15 to 20 minutes before putting into the
dishmachine.
Procedure
-- Racking / Loading Dishmachine:
- Rack
dishes of same size together in straight rows.
- Place
cups, glasses and bowls upside down in compartment-sized
racks. Place only one layer in each rack.
- Do
not overload, overlap or mix dishware.
- Place
flatware handles down, eating end up, in the silverware
baskets.
Procedure
-- Unloading Dishmachine:
- Allow
dishes to drain and air dry. Tilt cup and glass racks to
drain excess water.
- Make
sure trays are dried completely. Stack on ladder rack, if
necessary.
- Remove
clean dishes from racks and stack in proper storage places.
- Check
that all flatware is clean and dry. Transfer into clean
baskets and store with handles up, eating end down.
