Dishmachine Loading and Unloading

Procedure -- Scraping and Sorting Dishware:

  1. Scrape food soil from all dishware into disposal or garbage can.
  2. Thoroughly spray dishes with pre-flush hose until all food has been removed.
  3. Sort and stack dirty dishes on break down table.
  4. Pre-soak all flatware for 15 to 20 minutes before putting into the dishmachine.

Procedure -- Racking / Loading Dishmachine:

  1. Rack dishes of same size together in straight rows.
  2. Place cups, glasses and bowls upside down in compartment-sized racks. Place only one layer in each rack.
  3. Do not overload, overlap or mix dishware.
  4. Place flatware handles down, eating end up, in the silverware baskets.

Procedure -- Unloading Dishmachine:

  1. Allow dishes to drain and air dry. Tilt cup and glass racks to drain excess water.
  2. Make sure trays are dried completely. Stack on ladder rack, if necessary.
  3. Remove clean dishes from racks and stack in proper storage places.
  4. Check that all flatware is clean and dry. Transfer into clean baskets and store with handles up, eating end down.
