Steam Jacketed Kettle

Recommended Products:

Frequency:
After each use

Procedure:

  1. Flush the kettle with warm water immediately after use. Allow to drain.
  2. Close valve. Fill kettle approximately one-quarter full with a solution of Solitaire. Wash all surfaces inside and out. Use the proper brush to clean the draw-off pipes and outlet valves as the solution is draining. Scrub the adjacent piping, braces and valves.
  3. Rinse all washed surfaces with hot water.
  4. Sanitize food contact surfaces with solution of 150-400 ppm Oasis 146 OR 25 ppm Mikroklene using a spray bottle.
  5. Allow to air dry.

Frequency:
As needed, to remove lime scale

Procedures -- Deliming:

  1. Fill the kettle with warm water to just above the normal liquid level. Turn on the steam.
  2. While water is heating, add Lime-A-Way. Minimize splashing.
  3. Bring water to a near boil. Brush all surfaces above the liquid level as well as all outside surfaces if scale has developed. Allow the hot solution to stand in the kettle for one hour, brushing above the liquid level occasionally during the soaking period.
  4. Open the drain valve and brush off all loosened scale and film as the kettle empties.
  5. Rinse all surfaces with hot water.
  6. Sanitize food contact surfaces with solution of 150-400 ppm Oasis 146 OR 25 ppm Mikroklene using a spray bottle.
  7. Allow to air dry.
